Off the beaton track but well known to foodies in it's previous incarnation of "One Paston Place". Modern bistro food, the short but more than adequate menu indicating a passion for quality, seasonal, local ingredients. Seared scallops that melted in the mouth, slow roasted belly of pork with perfect crackling and the smoooothest mash ever known. Discrete professional service. Recession sensitive fixed price lunches (2 courses £12) and a reasonable wine list. 9/10.

Hardly a "secret find" as the Gingerman group is Brighton's most celebrated food business but taste the food and you know why. The Fox is a country pub/restaurant setting (the old Shaves Thatch) but offers food to satisfy the most metropolitan tastes. Care and attention to texture and flavour mean all of the dishes from simple onion soup to lambs tongue and sweetbread leave everybody happy. 8.5/10
